New York Strip Steak

  • Dust with Snake Bite Beef Rub (recipe below), salt & pepper and a little olive oil.
  • Place on very hot grill at the 10:00 position.
  • Allow to sit for 2 min then move to the 12:00 position and let sit for 2 min.
  • Turnover and repeat steps. This will give it a nice med-rare finish.
  • For additional cooking, place steak in 350 degree oven for 3 min for medium, 5 min for medium-well and 10 min for well done.
  • Allow beef to rest for 5 min after cooking.



Snake Bite Beef Rub 

6 ancho chilies, seeds & stems remove
1 teaspoon coriander seeds
2 teaspoons cumin seeds
1 teaspoon oregano
1 teaspoon cinnamon, ground
2 tablespoons kosher salt
2 tablespoons brown sugar 

1. Lightly toast chilies in a pan over a medium flame and turn constantly until lightly toasted, about 5 minutes. Remove and put in a spice grinder. Toast seeds and oregano until oils are released and you can smell the fragrance.

2. Combine these seeds with the chilies and add salt and sugar and grind to a course grind.

3. Rub over Beef and Grill


Smoked Cheddar Sweet Potato Steak 

1 tablespoon Smoked Cheddar Shredded
1 each Sweet Potato
1 tablespoon Olive Oil
Seasoning to taste

1. Cut Sweet Potato in wedges toss in olive oil and season to taste. 

2. Place in oven for 10 min at 350 degrees

3. Remove and top with cheese and place
back  in oven until melted, about 3 min.
