Bacon Wrapped Quail Salad with Caramelized Peaches

4 Whole Semiboneless Quails

4 Strips Apple Smoked Bacon

2 Ripe Peaches (sliced)

Sugar (as Needed)

1/2 cup goat cheese

1/4 cup pumpkin seeds (toasted)

4 cups Mixed Greens

1/3 cup Balsamic Vinegar

2/3 cup Olive Oil

1 tablespoon Sugar

Salt and Pepper to taste

1. Place Quail on cutting board and Wrap with Bacon holding with a tooth pick

2. Top sliced peach with sugar and caramelize with hand torch or place in 400 oven
for 10min.

3. Season Quail to taste Pan sear in sauté pan and place in 350 oven for about 10min
or until Bacon it crisp.

4. To make Dressing mix Balsamic, Oil, Sugar and season to taste.

5. Dress Greens with Dressing and place in 4 bowls top with peaches, goat cheese, pumpkin seeds and cooked Quail.
